Fried Squash Cakes - cooking recipe

Ingredients
    4 medium yellow squash, boiled whole, thoroughly drained and chopped until chunky
    1 small onion, chopped
    1 small whole egg
    6 plain saltine crackers, crushed
    1/2 c. corn meal mix
    1 tsp. salt
    pepper to taste
Preparation
    Mix all together as you would potato cakes and drop by large spoonfuls in hot oil and margarine, mixed.
    Fry slowly until golden brown. Turn as cakes brown.
    Makes 8 medium cakes.
