Italian Pasta Stir-Fry - cooking recipe
Ingredients

8 oz. linguini (uncooked)
2 medium tomatoes, seeded and chopped
1 medium onion, chopped
1 medium zucchini, sliced
1/4 c. parsley, snipped
1 Tbsp. olive oil
2 garlic cloves, pressed
1 tsp. each dried basil and oregano leaves
1/8 tsp. each salt and pepper
about 1/4 c. grated Parmesan cheese
Preparation

Cook linguini according to package directions, drain and keep warm.
Heat oil in a large skillet.
Press garlic into hot oil and stir-fry 15 seconds.
Add onion and zucchini; stir-fry 2 to 3 minutes or until tender.
Add tomatoes, parsley and seasonings. Stir gently until heated through.
Remove from heat and stir in linguini.
Grate Parmesan cheese over pasta.
Serve immediately. Yield:
8 servings.
