Baked Mashed Potatoes - cooking recipe
Ingredients

4 large potatoes, peeled and quartered
1/4 c. milk
1/2 tsp. salt
2 Tbsp. butter, divided
1 egg, beaten
1 c. (8 oz.) sour cream
1 c. small curd cottage cheese
5 green onions, finely chopped
1/2 c. crushed butter flavored crackers (Hi Ho is fine)
Preparation

Boil potatoes until fork-tender.
Drain.
Add milk, salt and 1 tablespoons butter.
Beat until fluffy.
Fold in egg, sour cream, cottage cheese and onion.
Place in greased 1 1/2-quart casserole dish.
