Bran Muffins And Jam - cooking recipe

Ingredients
    2/3 c. all-purpose flour
    2 Tbsp. sugar
    2 1/2 tsp. Calumet baking powder
    1/4 tsp. salt
    1 egg, beaten
    3/4 c. milk
    3 Tbsp. shortening, melted
    1 1/2 c. Post 40% Bran flakes
    2 to 3 Tbsp. jam or marmalade
Preparation
    Mix flour, sugar, baking powder, and salt.
    Combine egg and milk; add to flour mixture, then add shortening and mix only enough to dampen flour.
    Fold in cereal.
    Fill greased muffin pans 1/3 full.
    Spoon 1 teaspoon jam onto batter in each cup, then top with remaining batter.
    Bake at 425\u00b0 15 to 20 minutes or until golden brown.
    Makes 8 muffins.
