Eggplant Casserole - cooking recipe
Ingredients

1 large eggplant
1 onion
1/2 lb. bacon
3 eggs
12 oz. shredded Cheddar cheese
1/2 stick butter, softened
1/2 c. cornflakes
Parmesan cheese
several pats of butter
Preparation

Cut eggplant into cubes.
Boil until tender and drain.
Saute onion.
Fry bacon and crumble into small pieces.
Mix together. Add eggs, Cheddar cheese, softened butter and cornflakes.
Pour into casserole dish.
Sprinkle with Parmesan cheese and pats of butter.
Bake at 350\u00b0 for 30 to 35 minutes.
