Rum Lime Mousses - cooking recipe

Ingredients
    1 envelope unflavored gelatin
    1/4 c. light rum
    1/3 c. fresh lime juice
    1 Tbsp. lime zest
    3 large eggs, separated
    1/2 c. sugar
    3/4 c. heavy cream
    1 drop green food coloring, if desired
Preparation
    In saucepan, sprinkle gelatin over the rum and let soften for 1 minute.
    Stir in lime juice, zest, yolks and 1/4 cup of the sugar.
    Cook mixture over low heat until thickened.
    Set pan in bowl of ice to cool, but do not let set.
    Beat egg whites with a pinch of salt until they hold soft peaks.
    Beat in remaining 1/4 cup sugar until whites hold stiff peaks.
    Pour 1/4 of white mixture into lime mixture.
    Fold in remaining whites gently.
    Beat cream until stiff peaks form.
    Fold into lime mixture with green food coloring.
    Chill.
    Spoon into dessert dishes.
