Old Fashioned Southern Green Beans - cooking recipe

Ingredients
    1 1/2 to 2 lb. green beans, snapped
    1 quart water
    1/4 lb. salt pork
    2 Tbsp. oil
    Salt and black pepper, to taste
Preparation
    Combine the green beans, water, and salt pork in a large saucepan. My mother used to cook green beans in an iron pot. Bring to a boil.
    Reduce heat to medium and cook until beans are tender and most of the water has cooked out.
    This will probably take about an hour. Add oil and mix.
    Taste and add black pepper and salt, if needed.
    Some salt pork is more salty than other. If the salt pork is not sliced, cut several slits in the chunk of salt pork, cutting almost all the way through.
