Whole Grain Quick Bread - cooking recipe

Ingredients
    1/2 c. cornmeal, divided
    1/2 c. whole wheat flour
    1/2 c. all-purpose flour
    1 c. wheat germ
    1 1/2 tsp. baking powder
    1/2 tsp. salt
    1 c. apple juice or orange juice
    1/4 c. honey
    1 egg, slightly beaten
    2 Tbsp. vegetable oil
Preparation
    Set aside 2 tablespoons cornmeal for topping.
    Combine remaining dry ingredients in large mixing bowl.
    Add juice, honey, egg and oil.
    Stir just until moistened.
    Pour batter into 8 cup ring mold.
    Sprinkle reserved cornmeal over top.
    Microwave on 80 for 7 to 8 minutes.
    Rotate dish 1/2 turn and cook on High for 1 1/2 to 2 minutes or until bread tests done.
    Remove from microwave and let stand 10 minutes.
    Makes 8 to 10 servings.
