Pioneer Apple Pie(Diabetic) - cooking recipe

Ingredients
    2 (9-inch) pie crusts
    2 cans apple slices (packed in water; do not drain)
    1 1/2 c. apple juice
    1/4 tsp. rum extract
    1/4 c. cornstarch
    1 1/2 tsp. apple pie spice
    1/4 tsp. salt
    1 c. Equal sweetener
Preparation
    Bake 1 pie crust at 350\u00b0 until golden brown.
    Heat apples with water (undrained), 1 cup apple juice and rum extract to a gentle simmer until apples are soft.
    In small bowl combine 1/2 cup apple juice, cornstarch, apple pie spices and salt.
    Mix well.
    Add slowly to simmering apples.
    Stir gently but completely.
    Cook for 1 minute after mixture starts to boil.
    Remove from heat.
    Stir 1 cup Equal into mixture.
    Cool and pour into cooled pie shell. Place uncooked pie shell on top of filled shell. Seal and crimp around edges.
    Brush with water.
    Bake at 325\u00b0 until golden brown.
