Garlic Spread - cooking recipe

Ingredients
    6 whole heads new (unsprouted) garlic
    1/3 c. butter
    1/3 c. olive oil
    salt and pepper
    2 to 3 sprigs thyme
Preparation
    Preheat oven to 275\u00b0.
    Make incision around head of garlic to remove the outer skin from the top half of head.
    Arrange in a baking dish which will hold them (about 7-inch).
    Dot with butter. Pour 1/3 cup olive oil over heads.
    Salt and pepper well.
    Put thyme here and there.
    Bake, covered, for 30 minutes; then uncovered, basting every 15 minutes.
    Bake 1 to 1 1/2 hours longer. Serve by spreading garlic and soft white cheese on Italian bread.
