Orange Crackling Bread - cooking recipe

Ingredients
    1/2 lb. salt pork, cut in cubes
    2 Tbsp. finely chopped onion
    1 1/2 c. yellow corn meal
    1/2 c. all-purpose flour
    3 tsp. baking powder
    1 1/2 tsp. salt
    1 tsp. sugar
    2 eggs
    1/2 c. buttermilk
    1 c. Florida orange juice
    butter
Preparation
    In 9-inch ovenproof skillet, cook salt pork over low heat until very crisp.
    Remove and chop finely; drain off all but 1 tablespoon of fat.
    Add onion and cook until tender.
    In large bowl mix together corn meal, flour, baking powder, salt and sugar.
    In small bowl beat eggs with buttermilk and orange juice.
    Add egg mixture all at once to dry ingredients and stir just until mixed.
    Stir in salt pork and onion.
    Heat the skillet.
    Turn in batter and bake in 350\u00b0 oven for 30 to 35 minutes.
    Serve hot with butter.
