Lentil Stew - cooking recipe

Ingredients
    4 Tbsp. olive oil
    1 medium onion, chopped
    1 large shallot, chopped
    1/2 c. dried currants
    3 medium yams or sweet potatoes, peeled and cut into chunks
    1 bay leaf
    1 1/2 c. red lentils, washed
    2 (13 1/2 oz.) cans College Inn chicken broth
    salt and pepper to taste
Preparation
    Preheat olive oil.
    Add onion, shallot and currants. Cook until onions appear glassy.
    Add yams, bay leaf, lentils and chicken broth.
    Simmer for 35 to 45 minutes.
    Add salt and pepper to taste. May be made a day ahead and reheated.
    Serves 8.
