Scalloped Tomatoes - cooking recipe
Ingredients

1 c. chopped bell peppers
2 c. chopped onions
2 sticks low-fat margarine
3 cans drained tomatoes
1/2 c. sugar
saltine crackers
shredded cheese
Preparation

Cook peppers and onions in part of the margarine with sugar until tender.
Add drained tomatoes.
Line bottom of baking dish with saltine crackers.
Place tomato mixture on saltines, alternating layers.
Top with shredded cheese, then cover well with crushed buttered saltines. Bake at 350\u00b0 until top lightly browns.
