Homemade Hominy - cooking recipe

Ingredients
    4 c. shelled white corn
    5 or 6 qt. cold water
    4 Tbsp. soda
Preparation
    Wash corn.
    Put cold water in large cooker.
    Add corn and let soak several hours, then add soda and place over medium heat. Bring to full rolling boil.
    Reduce heat until just boiling and cook until corn is tender and skins or husks begin to loosen from the grain.
    This may take all day.
    After corn is tender and husks are loosened, remove from heat and drain.
    Rinse and rub the grains through the hands gently to remove the skins.
    Rinse and drain several times.
    The hominy is now ready for use.
    I use hickory cane corn.
