Sweet Potato Cake With Fresh Coconut Filling - cooking recipe

Ingredients
    2 1/2 c. unsifted cake flour
    2 tsp. cinnamon
    1/2 tsp. ground cloves
    1 1/2 c. sugar
    4 eggs
    3 tsp. baking powder
    1 tsp. ginger
    1/4 tsp. salt
    1 1/2 c. vegetable oil
    4 Tbsp. hot water
    1 1/2 c. grated raw sweet potatoes or 2 jars junior baby food
    1/2 c. chopped walnuts
Preparation
    Sift together flour, baking powder, cinnamon, ginger, cloves and salt.
    In a large bowl with electric mixer, beat sugar and oil for 2 minutes.
    Add egg yolks, one at a time, beating well after each addition.
    Stir in dry ingredients, hot water, sweet potatoes and walnuts.
    Beat egg whites until stiff, fold into batter.
    Pour into 3 well-greased and floured 8-inch round pans.
    Bake in a 350\u00b0 oven for 35 minutes or until cake springs back to touch.
    Cool on a wire rack for 10 minutes.
    Turn out of cake pans and cool completely.
