Beebee'S Sweet Relish - cooking recipe
Ingredients

3 qts. apple cider vinegar
7 c. sugar (1 c. less than 5 lbs.)
15 lb. green tomatoes (peck)
7 medium onions
6 red sweet peppers
6 green bell peppers
2 Tbsp. celery seed
2 Tbsp. mustard seed
2 Tbsp. whole cloves
2 tsp. ground red hot pepper
3/4 c. canning salt
Preparation

Grind tomatoes.
Add salt and set aside for 1 hour.
Grind onions and peppers.
Add spices, sugar and vinegar and add to tomatoes. Set for another hour.
Drain.
Cook on medium heat for 25 minutes.
Put in pint jars.
Makes 16 pints.
Or put in half gallon jar and refrigerate, using as needed.
