White Beans With Garlic, Spinach And Tomatoes - cooking recipe

Ingredients
    2 tsp. olive oil
    6 cloves garlic, sliced
    1 c. chopped onions
    2 c. chopped spinach
    2 plum tomatoes, chopped
    15 oz. can cannellini beans (or any other white bean) drained
    1/2 tsp. dried thyme
Preparation
    Heat the olive oil in a saute pan.
    When hot, add the garlic and onions.
    Continue cooking over medium to low heat for 10 minutes.
    Add 1 to 2 tablespoons of water if the onions begin to stick.
    Add the chopped spinach, cover, and continue to cook for 5 minutes.
    Remove the lid, and add chopped tomatoes, beans and thyme.
    Heat through.
    Serve plain or as a topping for crostini. Makes 6 servings.
