Irish Soda Bread - cooking recipe

2 c. unsifted whole-wheat flour
1 c. rolled oats
1 1/2 tsp. salt
2 c. raisins or 1 c. plus 1 c. currants
1 c. unsifted unbleached flour
1 Tbsp. baking soda
2 Tbsp. caraway seeds
2 c. buttermilk
Preparation

In large bowl, combine all dry ingredients. Stir in buttermilk. Knead on floured board lightly. Shape dough into ball and place in greased 2-quart casserole. Cut 4-inch cross on top with floured back of knife. Bake at 375\u00b0 for 40 minutes. Remove and cool on wire rack.
