Potato Salad - cooking recipe

Ingredients
    1 lb. medium round white potatoes
    3 c. water
    1/4 c. chopped green onions
    1/4 c. chopped red bell pepper
    1/2 c. celery, chopped
    1/3 c. fat-free mayonnaise
    2 Tbsp. plain low-fat yogurt
    1 tsp. mustard
    1 tsp. horseradish
    1/8 tsp. white pepper
    dash of paprika (for garnish)
    1/4 c. shredded carrots
Preparation
    Cook unpeeled potatoes in 3 cups water for approximately 35 minutes.
    Drain and allow to cool.
    Peel potatoes and cut into cubes.
    Combine green onions, red bell pepper and celery with potatoes.
    Chill for 2 hours.
    Mix mayonnaise, yogurt, mustard, horseradish and white pepper and pour over chilled potato mixture. Toss gently.
    Sprinkle paprika and shredded carrots on top. Makes 6 servings.
