Honduran Rice - cooking recipe

Ingredients
    1 small onion, chopped
    1 clove garlic, chopped
    1 slice tomato, chopped
    1/4 c. Mazola oil
    1/4 c. green pepper, chopped
    1 c. rice
    1 tsp. salt
    1/8 tsp. pepper
    2 1/2 c. water
    1 carrot, finely chopped
    1 cube chicken bouillon
Preparation
    Put oil in 2-quart pot. Add all other ingredients, except water. Saute, then add water. Stir until boiling; put lid on. Turn burner to medium and cook for 20 minutes. (Do not stir.) After done, crack lid and let stand for 5 minutes before serving.
