Fiesta Corn Bread - cooking recipe

1 c. flour
1 c. yellow corn meal
4 tsp. baking powder
1/2 tsp. salt (optional)
1 1/2 c. shredded Cheddar cheese
1 (8 1/2 oz.) can cream-style corn
1 (4 oz.) can chopped hot or mild green chilies, drained
1/3 c. milk
1/4 c. melted shortening
2 eggs, beaten
Preparation

Melt shortening in pan in oven to coat bottom evenly.
Combine dry ingredients; add melted shortening. Mix just until blended. Bake 30 to 35 minutes or until golden brown.
Insert with toothpick in center. Done when it comes out dry. Use 8 x 8-inch or 9 x 9-inch pan.
