One Pan Western Stir-Fry Chicken - cooking recipe

Ingredients
    1 box 5 Minute Uncle Ben's long grain and wild rice (6 serving size)
    1 pkg. boneless chicken breasts (2 whole breasts), cut into bite size pieces
    2 Tbsp. vegetable oil
    1 small onion, chopped
    2 c. shredded lettuce
    1 medium tomato, chopped
    2 c. water
Preparation
    In a large frying pan, saute the chicken in oil until tender and white.
    Add onion, water and rice, including the seasoning packet that comes in the box of rice.
    Stir and cover.
    Cook over medium heat for approximately 5 to 8 minutes or until the water has absorbed into the rice.
    Add the chopped tomato.
    Cover and continue to cook on low heat for 2 minutes.
    Add the lettuce; stir.
    Cover and cook for another 3 minutes.
    Tastes great with soy sauce for an Oriental dish.
    You can prepare ahead and refrigerate.
    Inexpensive and tastes great!
    Serves 4.
