Red Beans And Rice - cooking recipe
Ingredients

2 c. dried kidney beans
2 1/2 qt. water
3 Tbsp. bacon drippings
1 large onion, chopped
1 small green pepper, chopped
1/4 lb. salt pork or ham bone
1 clove garlic, finely chopped
1 bay leaf
2 Tbsp. chopped parsley
salt
pepper
1 1/2 c. regular rice
Preparation
-
Rinse
beans;
soak
overnight\tin
water.
Heat
bacon drippings in large frypan.\tAdd onion and green pepper.
Saute until
tender.
Remove
beans.
Add
water to soaking water to equal
2 1/2 quarts.
Pour in frypan.
Add beans, pork, garlic and bay leaf.
Simmer over low 3 to 4 hours or until beans are tender. Add
parsley,
salt
and
pepper to taste.
Cook rice separately according to package directions.
Serve beans over hot cooked rice.
Makes 6 servings.
