10 oz. pkg. frozen chopped spinach, thawed and drained
3 eggs
5 oz. Feta cheese, crumbled
12 melba rounds, crushed and divided
2 tsp. lemon juice
1/2 tsp. oregano leaves
2 Tbsp. margarine, melted
lemon slices (for garnish)
Preparation

Preheat oven to 425\u00b0.
In a medium bowl, beat eggs.
Add spinach, cheese, 2 tablespoons melba round crumbs, lemon juice and oregano leaves; stir to combine.
Spray 2-quart casserole with nonstick cooking spray; spread spinach mixture in bottom of casserole.
In a small bowl, combine remaining melba round crumbs and margarine; sprinkle over spinach mixture and bake until crumbs are golden brown, about 15 minutes.
Serve garnished with lemon slices.
