Tourlou(Baked Summer Vegetables) - cooking recipe

Ingredients
    2 large onions, sliced thin
    1 large eggplant, sliced crosswise 1/2-inch
    2 small zucchini, 1/2-inch thick
    1 lb. green beans
    1 large potato, 1/4-inch thick
    1 bunch parsley, chopped
    1/2 can tomato paste, diluted with some water
    1 c. canned tomatoes (can use fresh)
    3/4 c. olive oil
    1 tsp. salt
    1 tsp. pepper
    1 clove garlic, crushed
Preparation
    Mix all ingredients together and place in a baking dish.
    Bake at 350\u00b0.
    Bake, covered, for 30 minutes, then uncovered for 30 minutes or until vegetables are tender.
