Ingredients

4 thick slices smoked bacon
5 to 6 medium-large potatoes
1 large onion, finely grated
2 eggs, lightly beaten
salt and pepper to taste
dash of nutmeg
1 1/2 tsp. minced fresh parsley
vegetable oil (for frying)
Preparation

Fry bacon until crisp.
Drain, crumble and set aside.
Grate potatoes and drain excess liquid.
Add all ingredients to potatoes and mix well.
