Ingredients

4 large green apples
1/2 c. almonds
1/2 c. raisins
1/2 c. currants
lemon
1 Tbsp. sugar
4 eggs, separated
4 Tbsp. sugar
1 tsp. vanilla or lemon flavoring
Preparation

Peel and core the apples.
Cut tops off for covers; scrape out insides.
Mix with diced apple, almonds, raisins, currants, citron (chopped fine) and 1 tablespoon sugar.
Fill apples; cover with tops.
Bake until tender.
Put in well-greased pudding dish.
Pour over a custard made from the egg yolks (well beaten), 4 tablespoons sugar and the flavoring.
Add beaten egg whites last; fold in.
Bake until custard is set.
