Garlicky Green Rice - cooking recipe

Ingredients
    1 Tbsp. butter
    1 Tbsp. olive oil
    1 tsp. garlic, minced and peeled
    1 c. uncooked rice
    1 3/4 c. water
    1 tsp. salt
    1/8 tsp. pepper
    3/4 c. fresh parsley, chopped
Preparation
    In heavy 2-quart pan, melt butter with oil over moderate heat. Add garlic and cook 1 minute, being careful garlic does not brown. Add rice and cook about 2 minutes, stirring often until shiny and hot.
    Stir in water, salt, pepper and 1/2 cup of the parsley and bring to a boil.
    Cover pot; reduce heat to moderately low and cook 20 to 25 minutes until rice is tender and has absorbed water. Fluff rice gently with a fork and stir in remaining parsley.
    Makes 4 servings.
