Cantaloupe Soup - cooking recipe

Ingredients
    1 c. apple juice
    1 c. orange juice
    1/2 c. white wine
    2 Tbsp. quick cooking tapioca
    2 drops liquid red pepper
    2 medium ripe cantaloupes, pared and seeded
    whipped cream
    mint leaves
Preparation
    Combine apple juice, orange juice, wine and tapioca in a medium saucepan; let stand 5 minutes.
    Bring mixture to a boil, reduce heat and simmer 10 minutes. Cool completely; stir in red pepper.
    Finely chop one cantaloupe and add to soup.
    Refrigerate until serving.
    To serve, ladle into bowls; top with whipped cream and garnish with mint leaves.
    Serves 6.
