Poor Man'S Goose - cooking recipe

Ingredients
    1 1/4 lb. beef or pork liver
    2 Tbsp. bacon fat
    salt and pepper
    5 medium onions
    5 medium potatoes
    5 slices bacon
Preparation
    Cut liver into serving sizes.
    Brown both sides in fat. Sprinkle with salt and pepper.
    Put liver and drippings into a large casserole.
    Add onions and potatoes; sprinkle with more salt and pepper.
    Top with bacon slices.
    Cover casserole and bake at 350\u00b0 for 1 hour.
    Then uncover and bake 15 minutes longer to crisp bacon.
