Mozzarella Zucchini Special - cooking recipe

Ingredients
    2 tsp. margarine
    1/4 C. sliced celery
    1 sm. garlic clove, minced
    1 1/2 C. sliced zucchini
    1/2 C. canned crushed tomatoes
    dash of oregano
    2 oz. shredded mozzarella cheese
Preparation
    In 8-inch skillet heat margarine until bubbly and hot, add celery and garlic.
    Saute until garlic is lightly browned.
    Add zucchini and saute until tender - crisp.
    Stir in tomatoes and seasonings.
    Simmer until most of the liquid has evaporated; 5 - 10 minutes.
