3 medium potatoes, peeled and diced (about 2 c.)
3/4 c. water
1/2 tsp. salt
1 small onion, minced
1 tsp. curry powder
2 Tbsp. butter or margarine
1 Tbsp. all-purpose flour
1/2 c. undiluted evaporated milk

*One (10 ounce) package frozen peas and carrots can be substituted for the peas and mushrooms, if preferred.
