Mama'S Roast Beef And Vegetables - cooking recipe

Ingredients
    4 or 5 lb. roast
    potatoes
    carrots
    onions
    3 stalks celery
Preparation
    Use a 4 or 5 pound roast.
    Rub in about 1 teaspoon of salt, then sear in a hot skillet until brown on both sides.
    Remove to roaster and add a little water.
    Put covered roaster in a 400\u00b0 oven for about 30 minutes, then lower heat to 325\u00b0.
    Cook for at least 30 minutes, then add potatoes, carrots, onions and 3 stalks of celery according to the amount needed for your family.
    Cover and keep at 325\u00b0 until meat and vegetables are tender (at least 1 hour and 15 minutes).
    This slow cooking helps tenderize less choice cuts of meat.
