Scalloped Eggplant - cooking recipe

Ingredients
    1 medium eggplant, pared
    1 1/2 tsp. salt
    1/2 c. water
    8 white bread slices, crusts trimmed
    1/2 c. butter, melted
    1 egg, well beaten
    2 c. (8 oz.) shredded cheese
    1/4 tsp. pepper
Preparation
    Cut eggplant into 1-inch cubes.
    Combine with 1 teaspoon salt water; bring to a boil.
    Simmer for 10 minutes; drain.
    Cut bread into 1/2-inch cubes; toss with butter.
    Combine with eggplant, egg, half of cheese, 1/2 teaspoon salt and pepper in a buttered 1 1/2-quart casserole.
    Cover; bake at 375\u00b0 for 20 minutes.
    Remove cover; top with remaining cheese.
    Continue baking for 10 minutes.
