Towboat Gumbo - cooking recipe

Ingredients
    1 c Self Rising Flour
    1 c cooking oil
    1 cut-up chicken
    1 medium onion (chopped)
    1 medium Bell pepper (chopped)
    1 branch celery (chopped)
    salt and pepper
    8 cups hot water
    1 bay leaf
    1 tsp fil
Preparation
    Boil chicken and set aside.
    In a large pot mix flour and cooking oil and cook over low to medium heat until color of chocolate.
    Turn off heat and add onions, bell pepper, and celery. Cook this until soft, stirring constantly.
    When soft, add water 1 cup at a time very slow.
    When everything is mixed, add chicken and bay leaf, salt and pepper to taste.
    Simmer for 2 hours.
    15 minutes before serving, add fil.
    Serve over freshly cooked rice.
