New Perry Hotel Style Yams - cooking recipe

Ingredients
    3 medium-size sweet potatoes
    4 Tbsp. grated orange rind
    3 c. sugar
    1 c. Karo syrup
    1 1/2 c. water
    4 Tbsp. orange juice
    3 Tbsp. butter
Preparation
    Shred potatoes.
    Soak
    in salted water (1/2 cup salt to 2 quarts water).
    Soak
    for
    1
    to 1 1/2 hours;
    wash.
    Drain. Place in uncovered
    pan.\tPour syrup over (3 cups sugar, 1 1/2 cups water
    and\t1
    cup\tKaro)
    potatoes.
    Boil 5 minutes over medium heat.
    Add orange juice, grated orange rind and butter. Bake in 350\u00b0 oven 35 minutes or until potatoes are transparent and syrup is lightly thickened.
