Cilantro Chicken - cooking recipe

Ingredients
    3 Large chicken breasts, cut into bit size pieces
    1/8 cup olive oil
    2 small cans sliced water chestnuts
    1-3 fresh jalapenos, diced (depending on desired spiciness)
    1/2 cup cilantro, chopped
    1/2 cup green onion, chopped
    1/4 cup lemon juice
    salt & pepper to taste
    1 package instant yellow saffron rice
Preparation
    Begin preparing yellow saffron rice, following package directions.
    Saute chicken, oil and jalapeno in a large frying pan or wok.
    When chicken is about 1/2 way cooked through, add lemon juice, onion and water chestnuts.
    Stir frequently as you allow most of the juices to cook away.
    Once chicken is totally cooked through, add cilantro, salt and pepper.
    Stir and allow to cook for 2 minutes.
