Mexican Bean Soup(Frijoles Charros) - cooking recipe
Ingredients

1/2 lb. bacon, cut into small pieces
1 small onion, diced
1 or 2 jalapeno peppers, diced (if desired)
2 or 3 cloves garlic
about 2 tsp. salt
2 large tomatoes, diced
1 (2 lb.) pkg. dry beans (black, pinto or red)
2 or 3 Tbsp. fresh cilantro, chopped
Preparation

Clean and soak beans overnight.
Saute bacon, onion, garlic and pepper until tender.
Add this mixture plus tomatoes, cilantro and salt to beans that have been covered with water.
Simmer for 45 minutes.
Garnish with white cheese, if desired.
Serve with warm corn tortillas and hot sauce.
