Seafood And Grapefruit Salad - cooking recipe

Ingredients
    1/2 lb. medium shrimp
    2 grapefruit
    1/4 lb. crab meat, cooked (about 1 c.)
    1 Tbsp. lemon juice
    salt and pepper
    1/4 c. oil
    1 Tbsp. chopped parsley
    large lettuce leaves
Preparation
    Cook shrimp in boiling salt water until pink, 2 to 4 minutes. Drain, cool, peel and devein.
    Chill.
    Peel grapefruit with paring knife, cutting right down to flesh to remove all white pith. Working over a bowl to catch all juice, cut the sections away from the membrane, to leave pure fruit.
    Arrange lettuce leaves on plate.
    Put a mound of crab meat on one side, slightly off center, then arrange shrimp and grapefruit sections alternately placed around crab meat on one side of plate.
    (Divide number of shrimp up evenly to accommodate 4 servings.)
