Chicken Essex Casserole - cooking recipe
Ingredients

3 1/2 lb. chicken, cut up
1/2 c. diced celery
1/2 c. diced onion
2 c. chicken broth
2 1/4 c. small shell macaroni, uncooked
1 c. cubed Cheddar cheese
1/2 c. diced onion
1/2 c. diced green pepper
1/2 c. diced celery
2 cans mushroom soup
1 small can pimentos
1 can sliced water chestnuts
Preparation

Boil chicken until real done.
Season with 1/2 cup diced celery and 1/2 cup diced onion.
Cool and take meat from bones. Mix all together. Put into 9 x 13 x 2-inch Pyrex baking dish. Cover with foil.
Refrigerate overnight.
Bake, covered, 1 hour at 350\u00b0.
Bake, uncovered, 30 minutes at 350\u00b0.
Delicious.
