The Perfect Quiche - cooking recipe

Ingredients
    1 c. chicken broth (skim the fat)
    16 oz. 1 1/2% cottage cheese
    4 egg whites
    1 egg yolk
    1 Tbsp. Parmesan
    dash of nutmeg
    10 oz. dry spinach
    1 onion, chopped and cooked
    1 tsp. salt and pepper
Preparation
    Combine broth, cottage cheese, egg yolk and egg whites in food processor or blender.
    Blend until smooth (will be pale yellow and consistency of half and half).
    Add Parmesan, nutmeg, salt and pepper.
    In medium bowl, place very dry spinach and onion.
    Pour cream mix over and mix.
    Spray a 10-inch pie or quiche pan.
    Add mixture.
    Bake for 50 minutes to 1 hour at 350\u00b0.
    Let set 5 minutes and serve.
    Excellent with green salad and French bread.
