Banana Cake(Yields 48 Portions) - cooking recipe

Ingredients
    1 lb. shortening
    2 lb. granulated sugar
    1 Tbsp. vanilla
    8 eggs (14 oz.)
    2 lb. bananas, mashed (4 c.)
    2 lb. cake flour
    1 1/4 tsp. salt
    3 1/3 Tbsp. baking powder
    2 tsp. baking soda
    1 c. buttermilk
Preparation
    Cream shortening, sugar and vanilla on medium speed for 10 minutes.
    Add eggs to creamed mixture and mix on medium speed for 3 minutes.
    Then add bananas and mix for an additional 2 minutes. Combine dry ingredients.
    Add dry ingredients alternately with buttermilk on low speed, 2 to 3 minutes.
