Hog Head Cheese - cooking recipe

Ingredients
    hog head, cleaned
    black pepper to taste
    red pepper to taste
    salt to taste
    sage to taste
Preparation
    Clean
    hog
    head.
    Be
    sure to cut out the complete ear section,
    known
    as the death bell. This is important that all of the
    ear section be removed.
    Put hog head in a large pot. Cook until meat is very done, almost in pieces;\tthen debone. Put the meat in a chopper; chop very fine.\tAdd all seasonings to
    taste. Mix well.
    Put in a large glass bowl (Corning Ware is good to use) and press down with some type of heavy weight. We
    old
    timers always
    used the iron to press down, that is, when\twe
    were not doing all the young-uns clothes.
    Press for 24 hours.
    Keep cool. Eat now.
