Apple Pecan Muffins - cooking recipe

Ingredients
    1 1/2 c. flour
    1 tsp. baking soda
    1/2 tsp. ground cinnamon
    1/8 tsp. salt
    1 c. shredded Granny Smith apple
    1/2 c. chopped, toasted pecans
    1 egg
    1/2 c. sugar
    1/4 c. milk
    1/4 c. canola oil
    2 Tbsp. lemon juice
    1 1/2 tsp. vanilla
    3/4 tsp. grated lemon peel
Preparation
    In a large mixing bowl, combine flour, baking soda, cinnamon and salt.
    Add shredded apple and the pecans.
    In a separate bowl, combine sugar, milk, oil, lemon juice, vanilla, lemon peel and the egg.
    Stir well and add to flour mixture.
    Mix all ingredients thoroughly.
    Spoon into 12 paper-lined muffin cups and bake at 375\u00b0 for 25 minutes.
