Stuffed Sweet Potatoes - cooking recipe

Ingredients
    6 medium sweet potatoes
    1 (8 oz.) can drained crushed pineapple
    1/2 c. orange juice
    3 Tbsp. butter, melted
    3/4 tsp. salt
Preparation
    Pierce sweet potatoes with a fork.
    Bake in 400\u00b0 oven for 55 to 65 minutes, or until tender.
    Cool slightly.
    Remove pulp from potatoes, keeping the skins intact.
    In a bowl, combine pulp with pineapple juice, orange juice, butter and salt.
    Refill potato shells; place in a greased 13 x 9 x 2-inch baking dish.
    Bake in 400\u00b0 oven for 20 minutes or until heated through.
    Yield: 6 servings.
