Eggnog Quick Bread - cooking recipe
Ingredients

2 eggs
1 c. sugar
1 c. dairy eggnog (not canned)
1/2 c. margarine or butter, melted
2 tsp. rum extract
1 tsp. vanilla
2 1/4 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
Preparation

Heat oven to 350\u00b0.
Grease bottom only of 9 x 5-inch loaf pan. Beat eggs in large bowl.
Add sugar, eggnog, margarine, rum extract and vanilla; blend well.
Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Pour into greased pan.
Bake at 350\u00b0
for 45 to 50 minutes or until toothpick inserted in center comes out clean.
Cool 10 minutes; remove from pan.
Cool completely.
Makes 1 (16 slice) loaf or can be baked in two 5 3/4 x 3 1/4-inch loaf pans, greased on bottoms only.
Bake at 350\u00b0
for 35 to 40 minutes.
