Ingredients

1 3/4 c. plain flour
1 Tbsp. baking powder
1 c. sugar
1/3 c. vegetable oil
3/4 tsp. salt
2 eggs, separated
1 1/2 c. milk
Preparation

Sift together flour, baking powder, sugar and salt.
Beat egg whites until stiff, but not dry.
Set aside.
Beat egg yolks until thick and creamy and lemon color.
Continue beating; add milk, oil and dry ingredients and beat until smooth.
Fold in beaten egg whites.
Fry on hot grid iron or skillet and serve with syrup or jelly.
