Chinese New York Rice - cooking recipe

Ingredients
    3 Tbsp. oil
    1 lb. boneless chicken, cut in bite-size pieces
    3 1/2 c. chilled cooked rice
    3 green onions, sliced
    1 stalk celery
    1 small carrot, shredded
    2 to 3 Tbsp. soy sauce
    pepper to taste
Preparation
    Heat oil in a large skillet over medium-high heat.
    Add chicken and cook until tender and lightly brown.
    Add remaining ingredients.
    Cook and stir until heated through.
