Zucchini Bread - cooking recipe

3 eggs
1 c. oil
2 c. sugar
1 Tbsp. vanilla
3 c. flour
1 tsp. salt
1/4 tsp. baking powder
1 tsp. soda
1 tsp. cinnamon
2 c. peeled zucchini, grated
1/2 c. chopped pecans
Preparation

Beat eggs, oil, sugar and vanilla together. Sift flour, salt, soda, baking powder and cinnamon. Add to egg mixture and beat well. Fold in zucchini and nuts. Pour batter into two greased loaf pans. Bake at 325\u00b0 for 1 hour.
