Guyana Rice Treat - cooking recipe

Ingredients
    1 lb. large shrimp
    2 Tbsp. oil
    1 to 2 c. fresh string beans, cut into 1/4-inch lengths
    2 tomatoes, diced
    1/4 lb. shredded cabbage
    2 onions, chopped
    1 piece pumpkin, diced
    1 green pepper, diced
    6 slices pineapple, diced
    1 pt. rice, cooked
    salt to taste
    pineapple shell for serving
    parsley
Preparation
    Clean shrimp and remove shells.
    Saute shrimp in oil for about 3 minutes or until pink.
    Stir occasionally.
    Add vegetables and continue cooking for 5 to 10 minutes or until vegies are crunchy. Stir occasionally.
    Add cooked rice, pepper, salt and diced pineapple.
    Mix well together.
    Allow to become quite hot.
    Spoon lightly into pineapple shell.
    Garnish with parsley and serve hot.
